Watermelon is practically synonymous with summer. We love watermelon on its own or in a simple salad with feta and mint. This summer, though, I've been on a watermelon drink kick. Watermelon juice is quick to make and so, so refreshing. Watermelon ice cubes can be made from leftover watermelon juice and thrown in with seltzer and lime (and maybe a splash of tequila...). And finally the crown jewel: frozen watermelon spicy margaritas.
Watermelon Juice
Scoop out the insides of your watermelon and put everything into a blender. Blend until smooth, then pour through a fine mesh strainer to get out any leftover pulp or seeds.
Watermelon Ice Cubes
Pour watermelon juice into ice cube trays - duh.
Frozen Watermelon Spicy Margaritas
(adapted from Smitten Kitchen)
Cut watermelon into one to two inch cubes. Place on a baking tray and place in freezer until frozen. To make the margaritas, follow this ratio for each drink: 1 cup of frozen watermelon, 1.5 ounces (1 shot) tequila, 1 small slice of a spicy pepper (with seeds!), 1 teaspoon sugar, juice from 1 lime. Blend all together, adding a bit of water to think it out if needed. Pour and enjoy.
