Banana Muffins with Ghee, Cardamom and Cacao Nibs

I love ghee and I hate wasting food so when my bananas were nearing death I looked at a few different banana bread recipes and came up with this! These muffins are healthy but not too healthy :) I added cacao nibs and some really dark chocolate in the end which gave them a nice little crunch.

Servings: 12 Muffins!

Ingredients:

- 3 Bananas (VERY ripe!)

- 1/3 cup Ghee

- 3/4 cup Turbinado Sugar (aka raw sugar)

- 2 Large Eggs

- 1 tsp Vanilla Extract (I used Amanda's homemade!)

- 1 Cup Spelt Flour

- 3/4 Cup Almond Flour

- 2 TBSP Baking Powder

- 1 tsp Cinnamon

- 1 tsp Cardamom

- 1/2 tsp Salt

- 1/3 Cup Cacao Nibs or Dark Chocolate (optional!)


1. Preheat oven to 350 F. Prep muffin pan with paper liners or grease with cooking spray.

2. Peel bananas and place in a large mixing bowl. Mash them with a fork.

3. Add ghee and sugar to the bananas. Mash together with a fork or electric mixer.

4. Add eggs and vanilla to the banana mixture. Mix until smooth.

5. In a medium bowl, mix together the flours, baking powder, cinnamon, cardamom and salt.

6. Slowly add the dry ingredients to the wet - mixing as you go. Be careful not to overmix.

7. Spoon the batter into the muffin liners, filling them nearly to the top. You should have exactly enough batter for 12 muffins.

8. Bake for 25-30 minutes, until they are bouncy when you touch them.

9. Cool for 10 minutes.

10. Eat !

*Cool tip: You can make this as a loaf as well - just remember to grease the loaf pan and bake for 50-55 minutes.

*Cool tip: Once cooled, stored at room temperature in a sealed container to retain the moisture of the muffin.
